Spotlight: Zucchini

Z is for Zucchini (or Courgette)

OK, OK, I know it’s a vegetable in the culinary sense but botanically, it’s a fruit so I’m using it!

πŸ₯’Β The courgette is a summer squash

πŸ₯’Β The courgette is over 90% water

πŸ₯’Β The courgette contains both soluble and insoluble fibre – great for digestion

πŸ₯’Β One cup of cooked courgette provides;
40% daily recommended Vitamin A
16% of daily recommended Manganese
14% of daily recommended Vitamin C
13% of daily recommended Potassium
as well as good amounts of Magnesium, Vitamin K, Folate, Copper, Phosphorus, Vitamin B6 and Thiamine

πŸ₯’Β Courgettes are rich in lutein, zeaxanthin, and beta-carotene. These are Carotenoids, they act as antioxidants in the body and provide benefits for eye, skin, and heart health.

So, whether you replace your spaghetti with a zoodle or add some extra nutrition to your cakes, courgettes are fantastic!
